Auxiliary Services is excited to announce the appointment of Lee Mitchell as the new Director of Dining at the University of Kentucky.
Lee is no stranger to UK, having spent more than a decade shaping the campus dining experience through leadership roles with Aramark. Most recently, she served as Resident District Manager, overseeing dining operations across the university. Her career at UK includes service as Director of Operations, Marketing Manager, Food Service Director, and General Manager of Commons Market—roles that built a strong foundation in both the operational and student-facing aspects of dining. She also holds an MBA from Midway University.
As Director of Dining, Lee will guide all aspects of campus dining with a focus on innovation, student satisfaction, and community connection. Her vision emphasizes creating welcoming spaces, expanding menu options, and aligning dining operations with the university’s broader goals of well-being and sustainability.
